Problems with Tapioca Starch It is suggested that digestion and absorption of gut digesta may be influenced by the presence of chemically modified starches. One form of chemically modified starch is tapioca starch.
Research has shown adverse health effects on animals fed foods containing starch from tapioca. These diets showed to depress iron and zinc absorption, possibly leading to the noted iron and zinc deficiency in the study subjects, even when the diet fed contained adequate mineral content. Keep this in mind when choosing pet foods that have substituted tapioca starch for the grain starches in their "grain-free" foods. No harm is likely unless such foods are fed relentlessly according to the 100% complete and balanced myth. Steaming a Better Way to Cook A recent study concluded that steaming of broccoli had minimal effects on the leaching of vitamins and minerals, as opposed to cooking by conventional boiling. Apply this information to as many cooked foods as you can. European Food and Research Technology. Processing Can Deplete Important Nutrients in Corn Two carotenoids, lutein and zeaxanthin, are found most abundantly in corn. Corn is also high in beta-carotene. Processing of corn does play an important role in the viability of these nutrients in foods. Heat, light and air exposure can change the conjugated double bond configuration of the carotenoids into different isomers (E to Z), which are less bioavailable for absorption.
